JO PARSONS – COOKING WITH CONFIDENCE WORKSHOP

We would like to express our sincere thanks to Jo Parsons for joining us as our speaker for this week’s Devon in Sight Telephone Speaker Event.

Jo shared with us her experience of sight loss from an early age and how this did not deter her from training to become a chef and then to training and supporting others with sight loss in this field. More recently she has been integral to the development of a variety of community meal projects within the Kingsbridge area.

Jo was able to share lots of really valuable hints and tips on ways to make cooking enjoyable, easier and safer for people with sight loss. She strongly believes there are always ways around any problem from basic planning and small adjustments to food preparation, to the different aids and pieces of equipment that can make food preparation and cooking easier.
A gentleman who had been supported by Jo in the past was able to share his experience on the impact his time with Jo had made and he talked about making stew and dumplings and more recently chicken pies.

Jo’s story, skills and knowledge as a chef with sight loss was truly inspirational. I would recommend anyone who may have lost confidence in cooking or wants some tips on starting to cook for themselves have a listen to her story and advice.
